Easy Slow Cooker Chicken Stew


I couldn't think of anything more interesting to blog about today so I will write the recipe I am using for tonight's dinner. I created this one myself!


Easy Slow Cooker/Crock Pot Chicken Stew


4 medium potatoes

2 stalks celery (include leaves if desired)

1 carrot

1 small can corn niblets

1 small onion

1 packet Knorr's Cream of Leek soup mix

2-3 boneless, skinless chicken breasts cut into cubes (or use leftover roast chicken, shredded)

1/4 tsp sea salt

1/4 tsp black pepper

3-4 cups of hot water*


Chop potatoes into bite size cubes, slice celery and carrot, mince onion and drain corn. Place in crockery. Add soup mix and 3 cups of water(use 4 cups if you are going to leave the soup to cook all day on low). Add chicken and mix well. Add seasonings and cover. Cook on High for 4+ hours or on low for 6+hours.

*Hot water allows the soup mix to dissolve easier and starts warming the pot.


Makes about 6 servings.


Goes well with homemade biscuits or corn bread.
